16 oz tempeh
¼ red onion, chopped (fine)
½ green bell pepper, diced (fine)
1 ripe tomato, diced
1 clove garlic, minced
Juice of one lemon
1 ½ cups hummus (any flavor, we prefer spicy 3 pepper!)
- Begin by preparing the tempeh. Cut into small strips and heat in a pan for about 10-15 minutes. (You may need a bit of evoo)
- Once the tempeh is done, combine all ingredients in a bowl and serve.
- You can add any number of spices to this recipe; it is all dependent on the type of hummus you use. Play around and see if you can find a combo you like!
