Cool Quinoa Salad

What you will need:

1 cup cooked quinoa (any kind, red is our fav!)

1 cucumber sliced and diced

1 cup grape tomatoes, sliced

1/4 cup chopped scallions

1/4 cup fresh lemon juice

Salt and pepper to taste (if desired)

Instructions:

Mix all ingredients together in a bowl and serve chilled. Enjoy as a great lunch salad or a side dish to some chicken or fish!
