What you’ll need:
2 1/2-3 lb roast
1/4 cup fresh cilantro
1/2 large onion, chopped
10 small red potatoes, diced
2 garlic cloves, minced
1 tsp parsley dry
1 tsp oregano dry
2 cups water (this may vary)
1/8 cup extra virgin olive oil
salt and pepper to taste
Instructions:
1. Put everything in a crock pot and cook until the roast reaches 160 degrees. (About 2-3 hours).
2. Serve with fresh veggies & enjoy! (you may also add more veggies in with the roast, we just tried to keep it basic with something almost everyone will like)
