Nayonaise & Cheesy Taco Wonton Cups

We recently received free samples of from Nasoya, and we are excited to tell you all about it. We have long since given up eating traditional mayonnaise to cut down on large amounts of fat and calories, however, we will definitely be treating ourselves frequently to this healthier option. Nayonaise is a vegan alternative to mayonnaise, so it is egg and dairy free. It is also cholesterol free and a good source of vitamin B12 and Omega-3 ALA. It comes in 3 delicious options, traditional Nayonaise, Whipped Nayo, and Nayonaise Light, so there’s something to please every person’s preference. We have been experimenting with tons of new recipes that swap out traditional mayo with this better option. In our opinion, this great new product actually has a better taste and texture than traditional mayo.We highly suggest picking some up on your next trip to the grocery store, we sure will!

Here is our delicious recipe using Nayonaise!

Cheesy Taco Wonton Cups

What you will need:

Nasoya Wonton Wrappers

1 package Morningstar Farms Meal Starters Grillers Recipe Crumbles or 1 lb. of lean ground turkey(cooked)

1 cup fat free shredded cheese

1 package low sodium taco seasoning

2/3 cup water

½ cup Nayonaise

½ onion, chopped

Hot sauce (amounts will vary depending on personal preference)

Lettuce & veggies (topping)

Instructions:

-Preheat oven to 350 degrees

-In a large skillet, combine water, taco seasoning, onion, and crumbles(or cooked ground turkey)

-Cook over medium heat until moisture is absorbed, stirring occasionally

-While meat is cooking, place wonton wrappers in muffin cups (1 wonton wrapper per cup)

-Place a small amount of shredded cheese and a tsp. of hot sauce in the bottom of each wonton cup, bake for about 5 minutes, or until cheese is melted, remove from oven; set aside

-Once crumbles are done cooking, add Nayonaise, mix well

-Scoop mixture into wonton cups, filling them about ¾ of the way full

-Top each filled wonton cup with cheese and more hot sauce, if desired

-Bake filled wonton cups for an additional 5-7 minutes or until cheese is melted and wonton cups start to turn golden brown

-Remove from oven, allow to cool, and top cups with desired veggies, salsa, or greek yogurt

-Serve, and enjoy!

Cascadian Farm, Muir Glen, & Meatless Chili!

We recently received a free box full of great gifts from and and we couldn’t believe all of the scrumptious things that were inside! For starters, we love the companies for the fact that they are both certified organic. It is so important to pay attention to where your food comes from, and to ensure that there are as limited pesticides and chemicals as possible. Remember, you get out of your body what you put into it. (Read all about the dangers of pesticides here) From both companies we received cereal, granola, granola bars, diced tomatoes, green chiles, and even coupons for a free bag of frozen blueberries and pizza sauce (we used this with our whole wheat pizza crust). We also received reusable tote bags, which we have carried along on all of our trips to the farmers market, filled them full of fresh, organic fruits and veggies. We have absolutely no complaints, because all of the products were so delicious and useful in our busy lives! We have been topping our greek yogurts with the granola and carrying the bars around in our gym bags if we need a quick pick me up! Organic Meatless Chili

What you will need:

1 can (28 oz.) Muir Glen Diced Tomatoes

1 can (16 oz.) organic, low sodium, chili beans; undrained

1 package

2 tbs. hot sauce (you can add more if you like it hotter!)

½ medium onion chopped

2 tbs. chili powder

1 tbs. sodium free garlic seasoning

Sea salt and pepper to taste

Shredded fat free cheese (for topping)

Instructions:

-Combine all ingredients except for cheese in a large saucepan; mix well & Cover

-Over medium heat, simmer for about 30 minutes; stirring occasionally

-Pour into bowls, top with shredded cheese, and enjoy!

If you have the time, we like to start our chili in the morning and simmer over very low heat all day, because it brings out the flavors a little better.

Coach’s Oats and Chocolate Chunk Muffins!

Eating a HEALTHY breakfast (no donuts or muffins!) is very important for your overall health, and even more important in helping you maintain or lose weight. Starting your day of with a nutritional meal will give you more energy and help you concentrate better while at school or work. You will also be more energized to engage in physical activity. Many studies have also suggested that eating breakfast can assist with weight loss or maintenance, due to the fact that it encourages healthier choices throughout the day and starts up your metabolism. If you add in a lean protein, such as eggs, it will also help keep you fuller longer, which will prevent binge eating before lunchtime. There are so many benefits to eating breakfast that it only makes sense to start making it a daily habit.

One of our favorite breakfast foods is oatmeal. In fact, we recently received a free bag of Coach’s Oats brand oatmeal, and we are completely in love! It has the texture and flavor of steel cut oats, but its ready in minutes! The oatmeal has only 160 calories a serving, 6 grams of protein, and 4 grams of dietary fiber. It also helps lower your cholesterol, promote healthy arteries, and helps control blood pressure. We can’t believe how much better this oatmeal tasted, compared to instant oatmeal. The texture of Coach’s Oats is absolutely perfect, and the convenience it great for our busy lifestyles. We highly recommend that you pick up a bag!

Coach Lynn Rogers knows about persistence and excellence. He started and coached the women’s gymnastics program at California State University, Fullerton, for 24 years, winning a national championship, six regional championships and producing 66 individual All-American awards.

When Coach wanted a better oatmeal that wasn’t mushy and pasty, he went back to the basics. Starting with whole-grain oats, he and his wife, Bonnie, experimented in their home kitchen with toasting, grinding and cooking their own oatmeal. They discovered a way to make the oats tasty and hearty with a full-mouth texture, while cooking in fewer than five minutes.

When friends tried Coach’s oatmeal, they didn’t want to go back to regular oatmeal again, and Coach’s Oats was born. The oatmeal today has the same texture and flavor as that original batch of Coach’s Oats created by a gymnastics coach and his wife in their home kitchen many years ago.

We have also created a recipe using Coach’s oats!

Chocolate Chunk Muffins

What you will need:

1 ½ cup Coach’s Oats

1 cup unbleached, all purpose flour

3 egg whites

1 ½ tsp. baking powder

1 ½ tsp. baking soda

1 ½ Tbs. vinegar

1 cup stevia

¼ tsp. salt

½ cup plain Greek yogurt

1 cup unsweetened applesauce

1 tsp. vanilla extract

1 cup hot water

½ cup dark chocolate chips

½ cup unsweetened dark cocoa powder

We also added flax seed to ours, but that is completely optional!

Instructions:

-Preheat oven to 350 degrees

-Place oats and egg whites in a food processor for about 30 seconds (If there are still large chunks, keep processing until they are smaller)

-In a large bowl, combine oat/egg white mixture with the rest of the ingredients, except for the chocolate chips; mix until well blended

-Once everything is mixed well, add in half of the chocolate chips

-Pour mixture into lightly greased muffin pans (Do not over fill your muffin cups! Fill only ½- ¾ full)

-Bake for about 10 minutes

-After 10 minutes, remove muffins from oven and top with additional chocolate chips

-Bake for another 5-7 minutes, or until a toothpick inserted in the center comes out clean

-Let cool, and enjoy!

Choosing the healthiest “junk” foods!

We know that healthy eating can be super difficult, especially with all of the confusing food labels and tempting fast food commercials out these days. Remember to limit the amount of processed foods in your diet, as much as possible.  However, you can enjoy some of your favorite foods, as long as it is in moderation. If you do have to choose something thats on the “not so healthy” list, these are some better options, so that you can kill your cravings without killing your diet! 

Potato Chips

If you are going to eat a potato chip instead of your usual veggies and hummus(because we know you always choose the healthiest options!), we suggest going with a baked variety. The calories and fat content are much less in the baked version when compared to the original. However, there is still quite a bit of fat and sodium, so we suggest limiting them and making sure to pay attention to portion sizes. You could also try making homemade baked potato chips!

 

Frozen Pizza 

If you must eat a pizza to curb your craving, we would recommend getting Newman’s Own Thin & Crispy Roasted Vegetable Pizza! For 1/3 of the pizza it only has 240 calories and 11 grams of protein! Compared to the average slice of pizza, this one is much healthier! 

Soda

We are not fans of drinking soda, but we do understand that many people simply get the urge for one now and then. Well, if you absolutely can’t control your cravings, we recommend reaching for a Zevia soda! They have zero calories and are naturally sweetened with erythritol which won’t raise your blood sugar after you drink it! Even though they have zero calories, remember, there is no better option for your body than drinking water! 

 

Cupcakes/Cinnamon Rolls/ and other sweets

We know how strong cravings for sweets can be, and sometimes you just have to give in to the craving and get it out of your system. Here are our top picks! 

Whole Wheat Cinnamon Rolls

New Recipe! Zucchini Bites

 

What you will need: 

1 Zucchini cut into inch thick slices

For Pizza Bites:

1/4 cup organic pizza sauce

1/4 cup fat free shredded cheese

(optional) turkey pepperoni slices

For Jalapeño Popper Bites:

1/4 cup fat free cream cheese (you may not need it all)

thin jalapeño slices

Instructions:

-Preheat oven to 375 degrees

-Place zucchini slices on a baking sheet covered with parchment paper; bake for about 10 min

-Remove slices from oven and flip over; bake another 5 min

-Remove slices from oven and top with the toppings of your choice (for pizza bites, top with pizza sauce and shredded cheese/ for jalapeno popper bites, top with cream cheese and 1-2 slices of jalapeno)

-Bake for another 7-10 minutes or until cheese is melted

-Serve, and enjoy!!

These have very few calories and are a much healthier option to regular jalapeno poppers or bagel bites!

Keep Your Produce Fresh Longer!

 

We’ve all been there, bought a bunch of fresh produce at the grocery store or farmer’s market with the best of intentions only to find it going bad before it gets eaten. Here are some of the best ways we’ve found to solve this unfortunate problem:

  • Be picky! Don’t buy anything with yellowish tints, soft spots, bruises, or wrinkles.
  • Pay attention to the crispers in your fridge. The high humidity drawer is for your greens & herbs. The low humidity version is for those harder fruits and veggies, think: apples, pears, etc. Be sure to keep fruits and veggies separate (perforated bags work great) or they will cause each other to spoil.
  • Keep your fresh herbs and asparagus in a cup full of water, placing a plastic bag over the top of the cup will keep the humidity in and keep those herbs even longer.
  • The closer you get to the source, the longer your produce will last. Produce from the farmer’s market is typically picked 1-2 days before you buy it, this produce will last much longer than store bought.
  • Tie your onions up in panty hose! We know it sounds crazy, but it works!
  • Your lettuce will stay fresher if you make salads ahead of time and keep them in glass jars. They will last about a week
  • Buy your bananas organic! They ends aren’t sprayed with pesticides, so they last much longer.
  • Store your avocados in a brown paper bag. Also, do this with garlic.
  • Try to store all of your apples and citrus fruits in the fridge. They will last much longer as opposed to storing them in a bowl on the counter.
  • Soak all of your produce in a vinegar and water mixture when you get them home. This will wash off some of the pesticides and germs that could cause your produce to go bad faster.
  • If you want to pre-slice your apples, lightly coat them with lemon juice before bagging them up.

The Importance of Stretching in the Morning

Are you aware of the importance of stretching right after you wake up each morning? There are many benefits from doing so!

1. Relaxes your muscles

When you stretch, it releases any tension that maybe be built up in your muscles, and makes them more flexible. It warms up your muscles and makes them much more relaxed.

2. You will be more apt to work out early in the morning

If you stretch and warm up your muscles, you will be more energized and alert in the morning. This will make it much less difficult to get your booty on the treadmill.

3. You will be more prepared for physical activity throughout the day

Stretching is always a good idea before any workout, because it increases the flexibility of your muscles. So, if you start out your day with flexibility, you will need much less, if any, warm up time before being able to push your body to its limits!

4. You increase your blood flow

When you stretch in the morning, you increase the blood flow to your muscles. This will help you more alert and ready to start your day. You will also be able to concentrate better throughout the day. Make sure to keep this in mind especially if you have a big exam or presentation for work!

5. You will have better posture

You body will keep proper posture better is your muscles are relaxed from stretching. Good posture helps you burn more calories and prevents lower back pain!

Start making stretching a habit in your daily routine, and you will reap it’s many benefits!

When Injury Sets You Back

It happens to all of us at one point or another, we get into a groove loving our latest workout routine and perhaps take it a bit too far, then boom an injury. Most of the time these injuries are preventable so we’d like to share with you our tips on keeping your body in the best shape to keep going through with your workouts and not being forced by injury to sit out a few days, weeks, or even months.

Recently, Megan was hit with an unfortunate setback which is why we decided to share this with you.

I recently purchased new hiking shoes and didn’t wear long enough socks to keep the shoes from rubbing on the back of my leg the first time I wore them. The first hike I took in my new shoes was around 4 miles and after the first mile the rubbing set in and my leg started bleeding a bit. Unfortunately I was not prepared for this and didn’t have any way of cleaning it and by the time it became too painful to keep going we were at the top of the mountain and had to obviously make it back down. Needless to say, I got home, took the shoes off, showered and felt fine. I had a nice scab on my heel but other than that no problems. The next morning I woke up to a lot of pain in my foot and ankle, took some Advil and headed to work for the day. While walking around on it all day it began to hurt worse and worse until finally I looked down and saw how swollen my foot, ankle, and leg (all the way up to my knee) were. It was then that I realized I must have gotten an infection from walking around on a mountain with an open wound, too much dirt had gotten in causing cellulitis. NOT FUN! I had to go into urgent care right after work and get an antibiotic shot and take an aggressive dose of oral antibiotics for the next 10 days. Not only that, but my foot, ankle, and leg were so swollen and so painful that I couldn’t even put weight on them for the next 4 days. Not being able to go for a run or get in a good workout for that long totally stunk!

Long story short, take care of yourself and take proper precautions when going hiking etc. so that if you do sustain an injury while away from home you can properly clean or treat it the best way possible. I now make sure I have some antiseptic wipes, Neosporin, and Band-Aids as well as other first aid products in my Camelbak at all times. If I had been able to clean & throw a Band-Aid on my leg as soon as it became an issue I could have prevented this entire scenario.

The same can be said for starting a new exercise routine. For example, if you decide to start running and you never have before make sure to take it slow and give your body plenty of recovery time. Ice your knees and ankles afterwards, get in a good stretch before and after, drink plenty of water, get good sleep, and work on strengthening your leg muscles to help support your joints while running.

Get rest when you need it!

 

Bottom line, take care of your body and it will take care of you!

We received a free box of Quest bars the other day from Quest Nutrition to sample and review, and as soon as we opened up the box we were so excited to try all of the great flavors, such as cinnamon roll, chocolate brownie, and even strawberry cheesecake!
